Pav Bhaji Recipe

Prep time: 15 mins Cooking time: 50 mins

Ingredients

  • 6-8 Pav / Dinner rolls

  • 3 medium potatoes boiled and mashed

  • 1 Sweet potato boiled and mashed (optional)

  • 1 large onion finely chopped

  • 1 carrot finely chopped

  • 1 medium capsicum finely chopped

  • 3 tomatoes finely chopped

  • 2 tablespoons minced ginger-garlic

  • 4 tablespoons pav bhaji masala

  • 1 tablespoon red chili

  • 1 teaspoon turmeric

  • 8 tablespoons butter (added in batches)

  • 1 tablespoon ghee/clarified butter

  • 1.5 cups water

  • Salt to taste

  • Fresh chopped coriander

Other ingredients

  • 1 tablespoon kasuri methi

  • 1 teaspoon fenugreek

  • 1/2 tablespoon pav bhaji masala

To serve

  • 1 tablespoon butter

  • 1/2 teaspoon chili powder

  • Pav sliced in the middle

  • 1/2 cup finely chopped onions

  • Slices of lemon

  • Fresh coriander chopped

 

Instructions

  1. Boil potatoes and sweet potato(optional), mash and keep aside.

  2. Grind 1tbsp kasuri methi, 1tsp methi/fenugreek and 1/2tsp pav bhaji masala to a rough powder. Keep aside.

  3. In a pan, add 3tbsp butter and 1tbsp ghee. Add chopped onions and minced ginger-garlic.

  4. As the onions start sweating, add capsicum and carrot and saute for 5 mins.

  5. Add 1tbsp butter and mix. Add chopped tomatoes and salt and the kasurimethi-mix. Let them cook until oil starts to separate.

  6. Mash the mixture a bit and add turmeric and 1/2 cup water. Let it cook until water is evoperated.

  7. Now make some space in the center of the pan and add 1tbsp butter, add 1tbsp pavbhaji masala and mix. Add the mashed potatoes and sweet potato.

  8. Mix everything together and mash the mixture until everything is combined well. Add 1/2 cup water and mash for another minute. And add 1tbsp butter.

  9. Now add 2tbsp pav bhaji masala powder, another 1/2 cup water and let it cook on medium flame for 5 mins.

  10. Sprinkle chopped fresh coriander.

To Serve the Pav bhaji

  1. Heat tawa and add 1 tbsp butter, 1/2 teaspoon chili powder.

  2. Slice pavs/dinner rolls in the middle and dab them on the butter-chili mixture on tava.

  3. Serve pav-bhaji with chopped onions, lemon slice and chopped coriander leaves.
