Ingredients
1 cup Basmati rice
2 tablespoon oil
1 teaspoon cumin seeds
2 chopped garlic cloves
1 finely chopped onion
2 medium potatoes diced
1 chopped tomato
Salt to taste
1 teaspoon chili powder
3 teaspoon pav bhaji masala
1 small capsicum diced
1/2 cup frozen peas
2 cups water
Fresh coriander chopped
Instructions
Rinse and Soak 1 cup Basmati Rice in water for 10-15 mins.
Heat a pan and add 2tbsp oil. Add cumin and let it splutter.
Add chopped onion and fry until translucent.
Then add diced potatoes and fry until both onion and potatoes are slightly brown.
Add chopped tomato.
Add salt, 1tsp chili powder, 2tsp pav bhaji masala and cook for 2-3 mins.
Then add diced capsicum. Mix and add 2tbsp water and let it cook for 5 mins.
Add frozen peas at this point and mix well.
Now add the soaked rice and mix gently.
Add 2 cups of water to the mixture and add remaining 1tsp pav bhaji masala and close the lid and let it simmer for 15 mins on medium heat.
Take off the lid and add chopped fresh coriander.
Tip: add only 1.5 cups water if the rice is soaked for more than 15mins or if the Masala mixture is too watery.
