Veggies in Creamy Vegan Sauce with Herbed Rice

For Herbed Rice
1 cup cooked brown rice
1 garlic pod finely chopped
1 tablespoon olive oil
1 teaspoon dried oregano
1 tablespoon fresh parsley chopped
1/2 teaspoon chili flakes (optional)
For Creamy Vegan Sauce
4 tablespoons olive oil
2 garlic pods finely chopped
1 small onion diced or sliced
1/2 cup zucchini diced
8-10 broccoli florets
2-3 mushrooms sliced
1/2 cup bell peppers
1 tablespoon white flour
200-250ml oat or soy milk (more depending on your preference of thickness of the sauce)
1 tablespoon tomato paste
1 teaspoon paprika powder
1 teaspoon mixed herbs
Salt to taste
Heat 1tbsp olive oil, add chopped garlic and fry for a minute.
Add 1tsp dried oregano and fry.
Now add the cooked rice, a pinch of salt and mix well.
Add fresh parsley and chili flakes and mix well on medium heat.
Creamy Vegan Sauce with Veggies
Heat 2tbsp olive oil, add chopped garlic, and fry until it's slightly brown.
add onion and fry for a minute.
Then add Zucchini, broccoli, and bell peppers, fry until they are bright in color and are crunchy.
Add sliced mushrooms, add a small pinch of salt and fry until it's tender. Keep aside the fried veggies.
In the same pan, heat 2tbsp olive oil and add 1tbsp white flour and mix well until flour turns slightly golden brown.
Add 1tsp mixed herbs and mix well.
Now keep the heat/flame low and add the dairy free milk and mix well.
Next add the tomato paste and paprika powder and mix until sauce thickens slightly.
You can add more milk if you want the consistency to be less thick.
Add salt to taste, mix well.
Now add the fried veggies to the sauce and combine everything well.
Serve the hot sauce with herbed rice :)
