Vegetable curry

Ingredients

  • 2 cups of vegetables of your choice. (I have used carrot, broccoli, beans and capsicum).

  • 1 large onion chopped

  • 1 large tomato chopped

  • 2-3 green chilies

  • 4-5 garlic cloves

  • 1/2 teaspoon saunf/fennel seeds

  • 1/2 teaspoon cumin

  • 2 cloves

  • 1/2 teaspoon cumin powder

  • 1/2 teaspoon red chili powder

  • 2 tablespoons oil

  • 1 teaspoon ghee

  • 1 tablespoon besan

  • 1 teaspoon garam masala

  • 1 teaspoon salt or as per taste

 

Instructions

  1. Cut all the vegetables. Heat 1tbsp oil in a pan and add 1/2 teaspoon saunf.

  2. Add the vegetables once by one and toss them for few minutes or until they're half cooked. Keep it aside.

  3. Add 1tbsp oil to the same pan, add cumin and cloves.

  4. Put chopped onion, garlic and green chilies and fry until onion is brown.

  5. Add chopped tomato, salt, cumin powder and chili powder. Let it cook until tomato turns mushy.

  6. Take it out and once cooled, blend it to a smooth paste.

  7. Add ghee to the pan and once it's hot, add besan and stir. Wait until besan turns slightly brown and then add the onion-tomato paste.

  8. Put the tossed vegetables into the pan and mix. Add water to adjust consistency.

  9. Add garam masala and stir. Let it cook for 2-3mins.

  10. Serve with roti or chapati or rice!
