Vegan Gnocchi made of sweet potato and without eggs
and white sauce with soy milk

Ingredients
To make Gnocchi
1 large sweet potato
1/2 cup all purpose flour
1/2 teaspoon salt
1 large pot water (to boil gnocchi)
To make Vegan white sauce
1 tablespoon olive oil
4 garlic cloves minced
1 tablespoon all purpose flour/maida
1/2 cup soy milk (you can add normal milk for a non-vegan version)
1/2 cup spinach chopped
1 teaspoon oregano
Salt to taste
Chili flakes to sprinkle
Instructions
Making Gnocchi
Microwave sweet potato or boil it until it's soft.
Peal the sweet potato skin and mash without any lumps and add 1/2tsp salt.
Add 1/2 cup all purpose flour and knew to a smooth soft dough.
Take a portion of the dough and shape the portion into long rope shape on a floured surface, cut the rope shape dough into half-inch pieces.
Gently curl them on the back side of the fork to shape them to the classic gnocchi

Put them all in a pot of boiling salted water and let them boil until all of them start floating to the surface.
Making white sauce
Heat 1tbsp olive oil in a pan and add minced garlic and saute for 2-3 mins.
Add 1tbsp all purpose flour and roast until it starts to get golden brown.
Add chopped spinach and saute for a minute.
pour 1/2 cup soy milk, oregano and salt and mix.
Let it cook on low flame and turn off the flame when the sauce thickens.
Serving
You can fry the gnocchi in olive oil (optional step)
Pour the white sauce on the gnocchi and sprinkle chili flakes and serve with roasted veggies.
