Ingredients
3 egg whites
3 egg yolks
3/4 cup castor/powdered sugar
3/4 cup all purpose flour
2 tablespoon milk
2 tablespoon oil
1 teaspoon vanilla extract
A pinch of salt
Instructions
Separate 3 egg whites and whisk them with an electric beater/whisker until they are foamy. (make sure it is foamy and turning white before adding sugar, else the meringue will not form)
Add powdered sugar gradually in 3-4 parts and keep beating until meringue with stiff peaks are formed.
To the egg yolks, add a pinch of salt and vanilla extract. Now add the yolk mixture to the meringue and mix well.
Add 3/4 cup all purpose flour and mix well.
Now in a small cup, add milk and oil and mix well. Take a spatula of meringue mixture and mix it with milk and oil.
Add it to the rest of the cake mix and give a good stir.
Grease and line a 15cm round pan with parchment paper. add the cake mix and tap on a surface to remove all air bubbles.
Bake in a preheated oven at 170°C (338°F) for 30-35 mins.
Cut once the cake is cooled down.
Note
You can use this as a wedding\birthday cake.
