Sponge cake | Vanilla sponge cake

Prep time: 20 mins Baking time: 30-35 mins Serving: for 3 people

Ingredients

  • 3 egg whites

  • 3 egg yolks

  • 3/4 cup castor/powdered sugar

  • 3/4 cup all purpose flour

  • 2 tablespoon milk

  • 2 tablespoon oil

  • 1 teaspoon vanilla extract

  • A pinch of salt

 

Instructions

  1. Separate 3 egg whites and whisk them with an electric beater/whisker until they are foamy. (make sure it is foamy and turning white before adding sugar, else the meringue will not form)

  2. Add powdered sugar gradually in 3-4 parts and keep beating until meringue with stiff peaks are formed.

  3. To the egg yolks, add a pinch of salt and vanilla extract. Now add the yolk mixture to the meringue and mix well.

  4. Add 3/4 cup all purpose flour and mix well.

  5. Now in a small cup, add milk and oil and mix well. Take a spatula of meringue mixture and mix it with milk and oil.

  6. Add it to the rest of the cake mix and give a good stir.

  7. Grease and line a 15cm round pan with parchment paper. add the cake mix and tap on a surface to remove all air bubbles.

  8. Bake in a preheated oven at 170°C (338°F) for 30-35 mins.

  9. Cut once the cake is cooled down.
