Roasted Vegetables Salad

Prep time: 5 mins Cooking time : 15 mins

Ingredients

2-3 cups of vegetables

  • Broccoli

  • Zucchini

  • Carrot

  • Capsicum

  • Sweet potato

  • French beans

  • Asparagus

  • salt

  • pepper

  • garlic

  • chili flakes

  • oregano

  • 1 tablespoon olive oil

(You can add any vegetable of your choice)

 

Instructions

  1. Cut all the vegetables into medium size juliennes. Take out the broccoli florets.

  2. Arrange all the vegetables on a tray.

  3. Sprinkle salt, pepper, garlic, chili flakes, oregano.

  4. Sprinkle olive oil.

  5. Keep the tray in the pre-heated oven at 200 degrees for 10-15 mins or until the edges are charred.

  6. Add some lemon juice on top and serve while still hot.
