Red Sauce Pasta with Zoodles/Zucchini noodles

Ingredients

For Zoodles

  • Zucchini

  • 1/2 teaspoon olive oil

  • A pinch of salt

  • 1/4 teaspoon butter

For the sauce

  • 3 tomatoes (1 chopped and 2 blended smooth)

  • 1 small onion finely chopped

  • 4-5 garlic cloves finely chopped

  • 1/2 capsicum/bellpepper finely chopped (optional)

  • 1 tablespoon oregano mix/mixed herbs

  • 1/2 teaspoon salt

  • 1/4 teaspoon sugar

  • A pinch of crushed pepper

  • 2 tablespoons water

  • 1 tablespoon olive oil

 

Instructions

Zoodles (without spiralizer) (video reference is below)

  1. Use a vegetable peeler to peel thin and long slices of zucchini.

  2. Then cut them into thin noodles with a sharp knife.

  3. Keep it aside until sauce is done and you're ready to eat/serve.

Pizza Sauce

  1. Blend 2 tomatoes to get puree and chop 1 tomato.

  2. Heat olive oil in a pan. Add chopped garlic and onion and saute for 2 mins.

  3. Put in chopped tomatoes and capsicum/bellpepper (optional).

  4. Add tomato puree, oregano mix, salt and 2tbsp water.

  5. Add crushed pepper and let it simmer on medium flame for 4-5mins.

  6. Mash the sauce or blend coarsley once cooled and boil for a minute. Adjust salt if necessary.

Serving

  1. When the sauce is ready, Heat oil and butter in another pan.

  2. Put the zoodles and add salt and toss. (Do this step just before serving. Else the zoodles become mushy.You can also skip this step but zucchini tastes better when tossed for a minute).

  3. Take out the zoodles onto a plate and serve the sauce on top of it.

  4. Serve with garlic bread and cheese (optional).
