Pesto Omelette

Ingredients

  • 1 ripe Avocado

  • 2 whole eggs

  • 1/2 cup fresh basil leaves

  • 10 garlic cloves

  • 1 tablespoon pine nuts (you can skip this if it's not available)

  • 1 tablespoon olive oil

  • Salt to taste

  • 1/2 teaspoon pepper

  • 1/2 teaspoon chili flakes

 

Instructions

  1. Put fresh basil leaves, garlic into a blender and churn.

  2. Then add avocado and pine nuts and salt and blend until its smooth.

  3. Add olive oil and give a quick mix.

  4. Break 2 eggs, add the blended paste, chili flakes, pepper, salt and mix well.

  5. Pour a ladle of the mixture on tava and flip once the base is cooked.

  6. Omelette with Italian flavours is ready to serve!
