Ingredients
For Masala
1 cup dry peas
3-4 cups water
3-4 potatoes
1 cup coriander
1/2 cup fresh mint
3 green chilis
5-6 garlic pods
2 inches ginger
1/4 cup fried grams
1/4 cup grated coconut
1/2 tsp fennel seeds
3-4 cloves
1 star anise
2-3 cardamoms
1tsp cumin
2 inches cinnamon
3 tbsp. oil
1 tsp cumin
1/2 tsp fennel
2 small onions chopped
1 tomato chopped
1/4 cup water
Salt to taste
1 tsp coriander powder
1 tsp chat masala
1 tsp garam masala
To serve (for 1 serving)
4-5 golgappa puris or Papdi
1 tomato chopped
1 onion finely chopped
Chopped fresh coriander
Green chutney
Chaat masala to sprinkle
Instructions
Making Masala
Soak dried green peas overnight.
Pressure cook or boil soaked peas and potatoes until soft and mushy (4-5 whistles).
Mash and keep aside
Make a smooth Chutney of 1 cup coriander,1/2 cup fresh mint, 3 green chillis, 5-6 garlic pods, 2 inches ginger, 1/4 cup fried grams, 1/4 cup grated coconut, 1/2 tsp fennel seeds, 3-4 cloves, 1 star anise, 2-3 cardamoms, 1tsp cumin and 2 inches cinnamon
Heat oil in a pan and add cumin and fennel/saunf and let them splutter.
Add chopped onions and fry for 2 mins and then add chopped tomatoes and fry for a minute or two.
Now add the chutney and mix well. Add water and salt, mix well.
Add the cooked and mashed peas and potatoes and some more water and combine everything well.
Add 1 tsp coriander powder, 1 tsp chat masala, 1 tsp garam masala, add more water if it's too thick. And let it cook for 5 mins on medium heat.
Masala for Masala Puri is ready
To serve
Crush golgappa puris or Papdis on a plate.
Pour a ladle full of masala on the puris.
Add chopped tomatoes and onions
Drizzle some green chutney
Drizzle Tamarind chutney.
Sprinkle some salt and chili powder.
Add some chopped fresh coriander.
Add some sev on top.
