Ingredients
1 Carrot
1/2 bellpepper/capsicum
1/2 cup diced cucumber
1/2 cup broccoli blanched in boiling water for 2-3mins
1 small tomato
2 tablespoons pomegranate
1/4 cup avocado
1 cup lettuce
1/2 teaspoon oregano
1/4 teaspoon chili flakes (add more if you like it spicy)
Pinch of salt
Avocado dressing
1 tablespoon olive oil
1/4 teaspoon crushed garlic or garlic granules
Instructions
Making Salad
Cut All the above vegetables.
Heat oil in a pan and add garlic.
Add carrot and fry for a minute and then add capiscum and fry for a minute.
Add the blanched broccoli and stir for 2mins.
Add oregano chili flakes and salt and toss.
Take off from the heat to a salad bowl and add cut tomato, pomegranate and lettuce.
Add avocado dressing and mix.
