With Brown Rice

Ingredients
Dry ingredients
1 Bay leaf
1 teaspoon cumin
1 whole cardamom
3-4 cloves
4-5 green chilies
5-6 garlic cloves
1 inch ginger
1/4 cup grated coconut
1/2 cup water
1 cup fresh mint
2 cups fresh spinach/palak
1 large onion sliced thin
1 capsicum diced
2 carrots diced
1/2 cup beans chopped
Few cashew and raisins (optional)
2 cups half cooked rice (I have used brown basmati rice)
1 teaspoon red chili powder
Salt to taste
Instructions
Blend green chilies, ginger, garlic, grated coconut along with 1/2 cup mint, 1 cup spinach/palak and 1/2 cup water to a smooth paste. Keep aside.
Heat oil in a pan, add all the dry ingredients and sliced onion. Saute for 3-4 mins.
Add all the vegetables and saute for 2 mins. Add the cashews and raisins (optional).
Add the rest of the mint and palak and saute and saute them until they're tender.
Now add the masala paste, salt and chili powder and mix well. Add the half cooked rice and mix.
Pressure cook the rice and masala for 2-3 whistles.
Serve with cucumber raita.
Note: You don't have to add extra water while cooking in the pressure cooker as it already has enough moisture from the masala and fresh leaves.
