Broccoli and Carrot Soup

Ingredients


  • 2 cups Broccoli florets

  • 1 medium onion diced

  • 1 medium carrot diced

  • 1 green chili and garlic finely chopped

  • 1 tablespoon oil

  • 1/2 teaspoon dried oregano herbs

  • 1 teaspoon salt

  • 1/2 cup water

  • 1/4 teaspoon pepper

 

Instructions

Preparing soup


  1. Cut Broccoli florets and put them in a pot of boiling water for 2-3 mins and drain the water.

  2. Heat oil in a pan and add green chili, garlic and onion. Fry for 2 mins and add diced carrot.

  3. Saute for 2 mins and add broccoli florets.

  4. Add 1/2 tsp oregano and 1 tsp salt. Add 1/2 cup water and let everything boil until water level comes to half.

  5. Turn off the flame and let it cool and put the cooked vegetables to the blender and blend it smooth.

  6. Transfer back to the pan and add 1/4 tsp pepper and let it simmer for few mins. Add some water if the mixture is too thick. Adjust salt if necessary.

  7. Serve with grated cheese. (cheese is optional).
