Black Rice Pudding

Prep time: 5 mins Cooking time: 25 mins Serving : 3

Ingredients

  • 1 cup black rice

  • 2 turmeric leaves (optional)

  • 1/2 cup sugar (I have used brown sugar

  • 1/2 cup milk

  • 1/4 cup dry fruits (cashew, raisins, almonds and pistachios)

  • 1/2 teaspoon cardamom powder

  • 1.5 cups water

 

Instructions

  1. Add 1.5 cups water to 1cup black rice.

  2. Add 2 turmeric leaves and boil until the rice is cooked Or Pressure cook black rice for 7-8 whistles on medium flame. (turmeric leaf gives an amazing exotic flavour but it is optional if it's not available).

  3. Once the rice is cooked, take out the turmeric leaves and keep it on low flame.

  4. Add sugar and milk and let it come to boil until sugar dissolves and the mixture thickens.

  5. Add dry fruits and cardamom powder.

  6. Serve it hot.
