Besan laddu | Besan ladoo |

Prep time: 10 mins Cooking time: 30 mins yield: 30 - 35

Ingredients

  • 3 cups besan/chickpea flour

  • 1 cup ghee / clarified butter

  • 1.5 cups sugar

  • 6-7 cardamoms.

  • 1/4 cup various dry fruits / nuts for the crunch

  • 1/4 teaspoon turmeric powder (optional)

  • Chopped pistachios for decorating

 

Instructions

  1. Dry roast 3 cups besan for 5 mind on low flame.

  2. Then add 1/2 cup ghee to the roasted besan and mix until there are no lumps.

  3. Add another 1/2 cup ghee and keep stirring until the color changes to light brown and thickens slightly.

  4. Add 1/2 tsp turmeric to enhance the color. (this step is optional)

  5. Turn off the flame and let it cool for 1 hour. The mixture will thicken further.

  6. Blend 1 cup sugar with cardamom to get a smooth powdered sugar.

  7. Now add the powdered sugar and dry fruits and mix. It becomes thicker once mixed with sugar.

  8. Now take a portion and form small or medium sized balls and decorate with pistachios on top.

  9. Let it rest for at least 2-3 hours to harden.

  10. Ready to serve on a festive occasion.
