Beetroot & Carrot Omelette

Ingredients

  • 2 eggs (for 3-4 medium sized omelettes)

  • 1/4 cup grated beetroot

  • 1/4 cup grated carrot

  • 2 green chilies chopped

  • 1/2 teaspoon pepper powder

  • Salt to taste

  • Oil to drizzle

 

Instructions

  1. In a bowl, add grated carrot and beetroot, chopped chilies, salt and pepper.

  2. Add 2 whole eggs and mix well.

  3. Heat the tava/frying pan and spread the egg mixture with a ladle and drizzle oil on the sides.

  4. Flip once it's cooked and cook both sides.

  5. Colorful and healthy breakfast is ready in 5 mins!

Beetroot carrot omlette surprisingly tasty. Had never thought of beetroot as an ingredient to an omlette but I enjoyed it 😀
