Anjeer Dry Fruit Barfi | Fig Granola Bar

Prep time: 10 mins Cooking time: 20 mins Yield: 25

Ingredients

  • 1 cup fig / anjeer soaked

  • 1/2 cup raisins soaked

  • 1 cup chopped nuts and seeds (almonds, cashews, pista, sunflower seeds, pumpkin seeds)

  • 2 tablespoons poppy seeds

  • 1/4 cup raisins (not soaked)

  • 1/4 cup dried coconut grated

  • 1/2 teaspoon cardamom

  • 1/2 cup ghee (for 2 batches)

 

Instructions

  1. Soak figs and raisins for an hour and blend it to smooth paste.

  2. Heat 1/4 cup ghee in a pan and add the blended paste to it.

  3. Saute until ghee starts leaving on the sides. turn off the flame.

  4. Chop all the nuts. Heat 1/4 cup ghee in another pan and add the chopped nuts and poppy seeds. Roast them until they're slightly brown.

  5. Add the roasted nuts to the cooked fig and raisin paste.

  6. Roast dried coconut and cardamom for 2-3 mins and add it to the mixture. Add raisins. Mix everything to form a sticky mixture.

  7. Cover a plate or a tray with butter sheet or parchment paper.

  8. Spread the mixture on the parchment paper. Decorate with chopped pistachios.

  9. Let it cool completely and set. You can refrigerate it for few hours.

  10. Cut them into squares or bars.

Note :

  • you can store them for upto 2 weeks.

  • This is a sugar free barfi. and full of dry fruits and nuts. It's a power house of nutrients.

  • It's a perfect alternative for a sugary candy or desserts
